The spring season has officially begun and so we are posting this refreshing spring recipe on LovingPotatoes.com. We will be seasoning salmon and preparing it in the oven, accompanied by newly harvested potatoes in a simple but delicious potato salad. Not difficult to make, delicious to eat! We recommend that your use a delicious new harvest potato, as the skin is extremely thin and you need not peel the potatoes. But potatoes from the previous harvest, still available in supermarkets, are fine as well. Do opt for a firm texture potato with a smooth skin.

Duchess potatoes, or Pommes Duchesse, are festive potato swirls that are very easy to make at home with a few basic ingredients. People sometimes buy these potatoes ready-made and frozen in the supermarket, but making them yourself is not only fun, but also more delicious! You can make them using potatoes with purple or red flesh, but we use both purple and regular potatoes here.

Kumpir is a Turkish fast food that is as well-known in Turkey as our own portion of fries here in the Netherlands. The basic ingredient is a generous roasted potato, baked in the oven, the meal of which is mashed with butter and Turkish Kasseri cheese. The potato is then filled with all kinds of delicious ingredients. These include: corn, peas, pieces of pickle, olive or sausage, etc. Then add a sauce on top, for example ketchup and/or mayonnaise, and enjoy!
