CELERIAC-POTATO MASH

Making a mash is easy. The combination with the celeriac softens the puree somewhat. Mashes are delicious when combined with winter season dishes, such as a lovely cut of meat, or game, for example.

PREPARATION METHOD

Masher or potato ricer

INGREDIENTS

  • 400 grams celeriac
  • 500 grams creamy/starchy potatoes
  • 1 tablespoon olive oil
  • 1 splash of milk
  • 1 dab of butter
  • nutmeg
  • pepper and salt

METHOD OF PREPARATION

  1. Peel both the potatoes and the celeriac.
  2. Cut everything into small cubes.
  3. Boil the potatoes with the celeriac in 1 pan.
  4. Add salt to taste.
  5. When cooked, drain off the potatoes and the celeriac, but save the boiling liquid.
  6. Add the milk, butter, pepper and nutmeg.
  7. Mash the mixture well until you have a lovely puree. Do you want really smooth puree? Then use a potato ricer.
  8. Have a taste and add some more pepper, salt and/or nutmeg if desired.
  9. If the puree is not creamy enough, then add small amounts of boiling liquid.

Goes well with game.
