POTATOES WITH ASPARAGUS À LA FLAMANDE

Asparagus traditionally combine well with a lovely, fine texture potato. This recipe combines a delicious potato with boiled eggs, asparagus and a butter sauce.

PREPARATION METHOD

  1. Number of servings: 4

INGREDIENTS

  1. 800 grams small, firm texture potatoes, preferably Asparagus Lovers
  2. 1 small bunch of parsley
  3. 12 thick white asparagus
  4. 4 eggs
  5. 200 grams butter
  6. pepper and salt

METHOD OF PREPARATION

  • Scrub the potatoes clean with water.
  • Cut the potatoes, peeled or unpeeled, in small cubes about 1 by 1 cm in size.
  • Peel the asparagus and cut into pieces of approx. 3 cm (for a handy instruction video on how to peel asparagus, click here)
  • Cook until done in separate pans (you can also cook potatoes in a steam oven or microwave).
  • Melt the butter in a small saucepan over low heat and flavour to taste with pepper and salt.
  • Add the finely chopped parsley.
  • Boil the eggs for about 4 to 5 minutes.
  • Peel the eggs and chop them into small pieces.
  • Serve the pieces of egg next to the potatoes and the asparagus.
  • Pour the melted butter around these.
  • Season to taste with a bit more pepper and salt.

Enjoy!

TIPS

If you scrape your nail across the bottom of an asparagus and moisture is released, then you can be sure the asparagus is fresh.
