CASSEROLE WITH LEEK, MINCE AND POTATO

The savoury leek, combined with the softness of the crème fraîche and the egg make this a delicious casserole. With potatoes as a basic ingredient of course. The casserole is finished off with Parmesan cheese and herbs.

INGREDIENTS

  • 700 g creamy/starchy potatoes
  • 1 splash of milk
  • 300 grams mince
  • 6 small leeks or 4 to 5 large leeks
  • 3 eggs
  • 100 ml crème fraîche
  • 100 grams (fresh) shredded Parmesan cheese
  • 30 grams butter
  • 1 splash of olive oil
  • pepper and salt
  • 2 teaspoons dill

METHOD OF PREPARATION

  1. Preheat the oven to 200 degrees.
  2. Boil and puree the potatoes: mash well, add a splash of milk and a bit of pepper and salt. Make a firm mash.
  3. Heat both the oil and the margarine in a pan and add the leeks.
  4. Sauté the leek for 5 minutes, stirring regularly.
  5. Then add the mince and cook until the loose mince is done.
  6. Beat the eggs together with the crème fraîche and half of the Parmesan cheese, salt and pepper.
  7. Add a bit of salt and the thyme to the leek.
  8. After about 15 minutes, spoon the egg mixture through the leek.
  9. Spread the mash over the bottom of the oven dish and top with the leek mixture.
  10. Sprinkle the Parmesan cheese over the top of the casserole and place it in the preheated oven for about 15-20 minutes.
