DEEP-FRY
THE BASICS STEP BY STEP….
- Scrub or peel the potatoes
- Cut the potatoes into pieces shaped like fries – of course, you may also opt for wedges, slices or cubes.
- Rinse the fries with cold tap water: this removes the excess starch
- Pat the fries dry using a clean tea towel or paper towels
- Pre-heat the deep-fryer to 150°C
- Fries require double frying: first, fry them for 4 minutes
- Allow the excess oil to drain off on paper towels and allow to cool.
- Pre-heat the deep-fryer to 180°C
- Deep-fry the potatoes a second time until they are golden brown and crispy, which will take about 4 to 5 minutes.
- Sprinkle salt or herbs on the fries to taste
Tip!
Do not deep-fry too many potatoes all at the same time: we refer you to the manual of the deep-fryer for guidelines concerning maximum amounts.

Deep-frying is a basic cooking method in which the choice for a certain potato variety is a very decisive factor: the use of the wrong potato variety will greatly influence the end result. The fries will be limp and/or will brown too quickly. Not every potato variety is suitable for deep-frying. This is mostly due to the starch content of the potato. You will achieve the best results with our Fries potatoes from our ‘Special Purpose Potatoes’ line: these potatoes are specially selected for their deep-frying qualities! You can make delicious, crispy, golden brown fries!
Tip! Portion size
We recommend a portion size of approx. 200 grams of fries per person. Do you want to peel the potatoes? Then observe a portion size of approx. 250 grams.
