PREPARATION METHOD

INGREDIENTS
- 500 grams firm texture potatoes, preferably Asparagus Lovers
- 150 grams North Sea shrimp
- 500 grams white asparagus
- 200 grams fresh spinach leaves
- 2 spring onions
- 2 eggs
- 50 grams pine nuts
- 2 tablespoons peanut oil (or olive oil or (wal)nut oil)
- pepper and salt
METHOD OF PREPARATION
- Peel the potatoes and the asparagus (for a handy instruction video on how to peel asparagus, click here)
- Cut the potatoes into small cubes and cut the asparagus diagonally into strips.
- Wash the spinach and use a clean dry tea towel to dry the leaves.
- Stir-fry the raw potatoes and the asparagus in the peanut oil until they are cooked but still firm.
- Add the pine nuts and the spinach.
- Allow the spinach to shrink, then add the shrimp and finely chopped spring onion.
- Break the eggs above the wok and stir well.
- Season to taste with a bit of pepper and salt.
